Bob Wills – Head Cheese
In 1989, Bob purchased Cedar Grove Cheese, a cheese factory with a rich history dating back to 1878. Here, he learned to make cheese from the best in the business. When Bob became president of Cedar Grove Cheese, the factory primarily produced commodity cheese. However, he decided to establish a creative culture that combined the science of making cheese with the cheese maker’s art. In 2012 he decided to bring that culture to Milwaukee with the founding of the Clock Shadow Creamery.
He has amassed many accomplishments since then, including attaining Wisconsin Master Cheese Maker certification for both Cheddar and Butterkaese. As a member of the Board of Directors of the American Cheese Society as well as the American Cheese Education Foundation, he is prominent in the cheese community today. He has been a mentor to many successful and award-winning cheese makers across the globe.
